Check out one of my latest go-to’s for a fun cheat that’s made with healthier ingredients. The use of egg whites-only, as opposed to whole eggs, helps keep the recipe lower in fat. Almond milk is a nice way to cut down on dairy and utilize a plant-based substitute (always a fan!), and Bob’s Red Mill high fiber mix delivers the nutritional edge of whole grains as opposed to denatured, processed, and artificially enriched flours. The “organic” in front of chocolate chips makes me feel (mostly falsely) better, and— Shhhh……… I “sometimes” like to add a drizzle of chocolate syrup or agave nectar over these when all’s said and done ;-) Enjoy!
Darcy’s Super Simple Chocolate Pancakes-
ingredients: Bob’s Red Mill Organic High Fiber Pancake & Waffle mix, Simple Truth* Organic Chocolate Almond Milk, Simple Truth Organic Semi-Sweet Chocolate Chips, 3 egg whites from organic large brown eggs (*Simple Truth Organic is a part of the Kroger family, available at FredMeyer)
method: Pour 1/2 cup chocolate almond milk over 2/3 cup pancake mix. Stir together and mix in 3 egg whites and up to 2 Tbsp chocolate chips. Pour over medium heat skillet and cook like you would any other pancake batter.
serves 2 & yields 4-5 small/med pancakes
