Sometimes, when short on time, I find myself similarly short on ideas for a quick protein fix- other than plain old chicken. Please, not again!!!
Assuming there are those of you who can relate, I’m sharing one of my favorite quick-and-easy (no cooking required!) salad solutions. Tuna and cottage cheese provide more than substantial protein for a single serving, and avocado offers your daily fix of healthy fat. Oh… did I mention this recipe is also low/no-carb? Yes, if you need it, there’s that perk too!
Toss Together…
1 can Wild Planet brand tuna or chicken, drained
1 cup chopped greens
1/2 an avocado, mashed
1/3 cup low fat cultured cottage cheese
2 Tbsp green salsa
herbs/ seasonings of choice (I like a couple teaspoons of Simply Organic’s guacamole powder)
