If you’re anything like me, you look forward to the flavors of the season… fall pumpkin spices, winter gingerbreads, peppermint… anything earthy, nutty, spicy, and warm!! That in mind, I’m sleeves-rolled-up and off to the kitchen with the quest for creative answers to my more over-indulgent cravings.
Today’s Special… SPICY VANILLA PUMPKIN BREAD. Thanks to my friends at Orgain®, this one comes with a protein punch. Bodybuilder Bonus. Check out the specs below and give it a try (preferably post-workout!).
INGREDIENTS.
1 cup each of the following: ground oats or oat flour, Orgain® Protein powder (vanilla), canned organic pumpkin, water. 1.5 cup stevia in the raw powder, 3 egg whites, 2T 100% pure maple syrup (**note** if you like things extra sweet and aren’t concerned about a few extra sugar calories, add more maple to taste, OR use 1/2 c Sucanat instead of stevia), 2 tsp cinnamon, 1 tsp each of the following: pure vanilla extract, nutmeg, sea salt. 1/2 tsp each of the following: aluminum-free baking powder, baking soda,
allspice, ginger.
METHOD.
Preheat oven to 350°F. Lightly grease a small loaf pan with coconut oil. Mix together all ingredients until consistent. Pour into loaf pan and bake for 60-75min or until toothpick inserted in center of loaf comes out clean. Slice into 8 equal servings.
