Although I am dedicated to a clean-eating lifestyle, I’m no stinge when it comes to flavor. I like rich and full-bodied recipes, and so I oftentimes find myself evolving old favorites into new dishes that offer cleaner, less fattening solutions.
That said, I still really don’t care for clean counterfeits. (Anecdote for example: I recently tried a healthy ice cream which I will not name, in the so-called “peanut butter” flavor they offered. Talk about a let-down. This girl LOVES peanut butter, and it didn’t even come close. Not. Even. Close. I refuse to be fooled.)
So with that in mind, let me promise you that this pizza hot dish delivers. It is full of flavor, low in carbs, high in protein, and pretty low fat too! But do taste and decide for yourself…
INGREDIENTS: 2-3lbs ground turkey breast (try to find organic as possible), 16oz sliced mushrooms, one small can of chopped black olives, fresh basil, 1 can organic diced tomatoes or tomato sauce (just plain no sugar added), 1/2 head of cauliflower, one large organic egg, 2.5 cups organic low fat cottage cheese (I prefer Nancy’s cultured version), minced garlic, garlic powder, Frank’s Red Hot sauce, parsley.
Note- I like to bake mine with a slight crust on the bottom. This is optional, but recommended. For reference, I adapted a cauliflower crust recipe from http://allrecipes.com/recipe/cauliflower-pizza-crust/, by omitting the cheese.
METHOD:
1. prepare cauliflower crust (see http://allrecipes.com/recipe/cauliflower-pizza-crust/) in the bottom of a 9×13 baking dish, and bake until golden or as desired.
2. in a large skillet begin warming turkey breast with 8oz sliced mushrooms, can of crushed olives, and 1/4 cup red hot sauce.
3. in food processor, mix together diced tomatoes (drained) or tomato sauce, 8 oz sliced mushroom, 2tsp minced garlic, 1 cup of franks red hot sauce (yes, I know it seems like a lot!), 3-4 large basil leaves, and a small bit of black ground pepper to taste.
4. pour the sauce mixture over the meat and simmer for a few minutes. (I personally like to add a bit of garlic powder) When finished cooking, tilt the skillet onto one side to help separate excess fluid from the meat mixture. Using a serrated spoon, scoop meat mixture onto crust in the 9×13 baking dish.
5. in food processor, combine cottage cheese, the white only of one large egg, and 2tbsp fresh chopped parsley. Blend until smooth. Pour over the meat mixture, using spatula to spread evenly across the top.
6. put casserole into oven and bake for approx. 30min at 350°F
Cut, serve and enjoy! (serves 8-10)
