When monitoring macros I keep two very important rules:
1. MAXIMIZE NUTRIENTS
2. MINIMIZE TOXINS.
Modified foods and non-food (chemical) alternatives not only lack nutritional value, but are often harmful to the body. While controlling macros is a reliable weight-loss strategy, nutrient deficiency and toxic stress contribute to greater long-term health risks. finding ways to keep it both DELICIOUS and REAL is adventurously rewarding. Check out this go-to for a surprisingly satisfying mac’n cheese option.
•3-4 cups finely chopped organic cauliflower
(Costco is selling it fresh & pre-cut as “cauliflower rice”)
•1-2Tbsp olive, coconut, or avocado oil
•1-2 cups nancy’s low-fat cultured organic cottage cheese
•1 packet of cheese powder from an annie’s organic boxed mac and cheese
•fresh parsley or green onions (optional)
Warm the cauliflower and oil in skillet until cooked tender (5-7min). alternatively, you could boil or steam to soften. combine cooked cauliflower with cottage cheese and cheese powder. top with parsley or onions if desired. serves 3-4.
