These turkey pot pies are a great way to spend your leftovers… Fair warning, however: although these are clean, they are NOT lean! (yes, there IS a difference)
INGREDIENTS
•2 cups leftover turkey
•1/4 cup raw or organic butter
•2.5 cups @simpletruth4u organic chicken broth
•1/2-3/4 cup @organicvalley half & half
•1/2 cup organic yellow onion finely chopped
•1/4 cup @namastefoodsllc gluten free flour
•2 bags @simpletruth4u frozen mixed vegetables
•2Tbsp @andrewandeverett organic Parmesan cheese
•salt, pepper, and spice islands organic garlic herb seasoning to taste.
•2pkgs @simpletruth4u pie crusts
METHOD
Set oven at 350. Cook onions in butter over medium until translucent. Add turkey, flour, broth, cream, and stir constantly a couple minutes until thick. Add seasonings & Parmesan and frozen veggies. Bring to a slow boil and cook a few minutes stirring constantly…
…prepare six 4-inch pie tins with thin layer of pie crust. Pre-bake in oven for just a few minutes to condition crust. Remove and fill evenly with mixture. Top each with thin layer of pie crust, pinching edges and cutting vents in top. Bake 20 min or until crusts are golden. Remove from oven and enjoy!!
