My nameless new salad! For now, we’ll just call it YUM (Yet Unnamed Meal)
The holiday season is without a doubt our most challenging when it comes to keeping our eating habits in check. Although I think it’s important that we relax and enjoy some special celebrations and fun recipes, our eating-centered events tend to stack up! I like to find creative ways to keep-it-clean and light, especially when asked to bring something for a party-platter or potluck. That said, today I’m bringing to the table my latest love for a full and festive salad- this one delivers a surprising punch of parsley and pistachio, among other personal preferences… Toss it up and prepare to be delighted ;-)
P.S. due to the fact I haven’t named this medley… I’m fielding insightful suggestions…???
Salad Ingredients: Chopped fresh Kale, chopped parsley to preference, chopped apples (red or green!), chopped avocado, shelled pistachios (I was admittedly indulgent and went with the shelled, dry roasted, and salted ones here)
Dressing Ingredients: (to personal preference/taste) Apple Cider Vinegar, Balsamic Vinegar, Extra Virgin Olive oil, small amount of raw honey or agave, cider spice* (*optional- I opened a few tea bags of my favorite spiced cider varieties, steeped them in a few Tbsp hot water for a few minutes to soften, and added to the dressing mix)
Toss together all of the above!
