Sometimes desperate times call for desperate measures. Okay, so maybe “desperate” is too harsh. Let’s just call this recipe “doable” for some, “decent” for others, and, perhaps for those on the strictest of diets, approaching “delicious”. In any case, the calorie-conscious can always appreciate a freebie like cucumber, especially with it’s crispy chill appeal. And for those with a hankering for some creamy zest, my makeshift chipotle dipping sauce provides a low fat way to satisfy–or at the very least assuage…
Ingredients: Fresh Sliced Cucumber Chips, 6oz Nancy’s Organic Greek Yogurt*, 1tsp-1Tbsp to taste Frank’s Red Hot sauce, 1-2tsp to taste Simply Organic ranch dip mix.
Method: Mix together yogurt, hot sauce, and ranch dip to taste. Serve with cucumber chips and/or your version of healthy snack crackers. Doesn’t get easier than that, folks:-)
P.S. if you’re not adhering to a strict diet, you may enjoy incorporating some whole grain or sprouted chips or crackers…
*I recommend the whole milk version rather than non-fat, even though, *gasp* yes, it is higher in fat. Pictured is the non-fat as it was all that was available in my store.
