Easter Eats: Clean Caloric Indulgences

IMG_3044   Every holiday has it’s way of bringing about hearty meals and party platters.  Easter is no exception, and believe me when I say, I’m ALL ABOUT enjoying some wonderful dishes from time to time.  Yes, that means excess calories, lots of smiles, and a fuller-than-usual tummy!  But the one thing I keep in mind regardless of when or what I’m eating is that caloric indulgences don’t have to be unclean!  Here’s a delicious Easter Eggs brunch dish that I love to enjoy to the fullest… it may be loaded, but it is BOTH wholesome AND mouth-watering!!  (I want to eat it RIGHT NOW!!!)

Ingredients: 8 whole organic brown eggs,  6 organic egg whites,  1.5 cup chopped organic broccoli, 1 cup chopped organic red bell pepper, 8oz organic cultured (full fat) cream cheese*, ~1/3 cup organic cheddar cheese powder**, 1 tsp minced organic garlic, 1Tbsp dill weed, 1.5tsp real salt or celtic sea salt, Ezekiel Sprouted grain organic cereal*** *whenever consuming dairy, I feel it’s important to acquire it in the most digestion-friendly form possible.  That means I look for cultured & or organic full fat products.                            **I used a cheese packet from a box of Annie’s Organic mac ‘n cheese, as this was the quickest and easiest type to find.                                                                                         ***As previously stated, I like my food as non-toxic, nutritious, and digestible as possible.  Ezekiel’s grain cereal is not only organic, but it is sprouted, making it more nutritious & enzymatic, and consequently, easily digested.   IMG_5362 Method: Preheat oven to 350 F.  Beat together eggs, egg whites, and cream cheese.  Slowly blend in cheese powder, garlic, and spices.  Toss in the broccoli & bell pepper, hand mixing til well incorporated. IMG_8291 Pour mixture into a lightly greased (I used coconut oil) 9 x 13 glass baking dish.  Place in oven for 20min, then remove and top with Ezekiel cereal for a crusted finish.  Return to oven for an additional 20-25min.  Remove, cool slightly, and cut to serve.
