Chocolate– yes, CHOCOLATE!! Breakfast Loaf

     Surprising though it may seem, I’d say I’m a bit more of the “take it or leave it” persuasion when it comes to chocolate.  Not that I don’t appreciate it’s rich splendor, but given a choice, I typically opt for vanilla varieties…

20140703-230220-82940065.jpg…Recently, however, I was tricked into trying a new, very chocolate-in-nature, protein powder.

I’ll begin my explanation with a Costco-shopper confession: Ingredient stickler that I am, I typically make a b-line right past the [junk-filled] protein powders at the front of the store and head straight to check- out.  Shocking and revealing, I know;-)  But not too long ago, two big words printed on one of those giant tubs stopped me in my tracks:  Organic Protein.  Unoriginal and generic as the name may be, there was no passing up a test-run on a potentially wholesome bargain.  I scanned the label of this plant-based powder and decided to give it a try.  It was then that I realized it only came in chocolate fudge.  Darn.  Except not.  It’s delicious.  I have since concocted a recipe that I just have to share—


All in favor of chocolate cake for breakfast, say AYE!!!

INGREDIENTS:  1.5 cups Orgain’s Organic Protein (Costco); 2 cups Ground Oats or Oat Flour (I put my oats in a coffee grinder and make flour); 6 Egg Whites; 2 Tbsp coconut oil (melted): 1 cup Stevia Powder; 1 cup Water (room temp- not too cold or it will solidify the coconut oil); 1 tsp Baking Soda; .5 tsp Sea Salt.

METHOD:  Pre-heat oven to 350°F.  Lightly grease a standard size glass loaf pan (I spritz it with Spectrum brand coconut oil spray).  Mix together all ingredients and pour into pan.  Bake approximately 45min, or until toothpick inserted in center comes out clean.

For a substantial breakfast portion, makes about 4 servings depending on your caloric needs.  Otherwise and in any case, cut into slices of desired size and enjoy!
